My grandmother died three years ago. The thing I miss most, apart from her company, is her cooking. She made dishes that nobody else can quite replicate.

Before she died, I asked her to write down her most important recipes. She said she did not use recipes. She cooked by feel, by smell, by memory. Everything was a handful of this and a bit more of that.

But she tried. She sat with me in her kitchen and made her famous tomato sauce while I watched and wrote notes. I measured everything she added, sometimes having to ask her to pause while I caught up.

The written recipe looks straightforward. But when I make it, something is always slightly different from hers. The tomatoes I find are not quite the same. The olive oil she preferred is now difficult to find. And there is something, I suspect, that cannot be written down at all.

Still, when I make it, the smell fills my kitchen and for a moment she seems close. That is worth something.

Mia nonna è morta tre anni fa. La cosa che mi manca di più, oltre alla sua compagnia, è la sua cucina. Faceva piatti che nessun altro riesce davvero a riprodurre.

Prima di morire, le ho chiesto di scrivere le sue ricette più importanti. Ha detto che non usava ricette. Cucinava a sentimento, con l'olfatto, a memoria. Ogni cosa era una manciata di questo e un po' di più di quello.

Ma ci ha provato. Si è seduta con me in cucina e ha preparato il suo famoso sugo di pomodoro mentre io guardavo e prendevo appunti. Misuravo tutto ciò che aggiungeva, a volte dovendo chiederle di fermarsi mentre la raggiungevo.

La ricetta scritta sembra semplice. Ma quando la faccio io, c'è sempre qualcosa di leggermente diverso dal suo. I pomodori che trovo non sono proprio uguali. L'olio d'oliva che preferiva ora è difficile da trovare. E c'è qualcosa, sospetto, che non si può scrivere affatto.

Eppure, quando la preparo, il profumo riempie la mia cucina e per un attimo lei sembra vicina. Questo vale qualcosa.
